Khageena with Instant Green Chili Pickle (Achar)
Recipe in English:

Ingredients:
-Oil ¼ Cup
-Pyaz (Onion) chopped 2 medium
-Anday (Eggs) 4
-Tamatar (Tomatoes) deseeded & chopped 1 & ½ Cups
-Lal mirch (Red chili) crushed 1 & ½ tsp or to taste
-Namak (Salt) 1 tsp or to taste
-Hari mirch (Green chilies) deseeded & chopped 4-5
-Hara dhania (Fresh coriander) chopped ½ Cup

Directions:
-In wok,add oil,onion and sauté until translucent.
-Add eggs one by one,mix well continuously and cook until oil separates.
-Add tomatoes,mix well and cook on high flame for 8-10 minutes.
-Add red chili crushed,salt and mix well.
-Add green chilies and mix well.
-Add fresh coriander and mix well.
-Cover and simmer for 4-5 minutes.
Instant Green Chili Pickle

Ingredients:
-Rai dana (Mustard seeds) 1 tsp
-Kalonji (Nigella seeds) 1 tsp
-Saunf (Fennel seeds) 1 tsp
-Zeera (Cumin seeds) 1 tsp
-Sarson ka tel (Mustard oil) ½ Cup
-Meethi dana (Fenugreek seeds) ¼ tsp
-Haldee powder (Turmeric powder) ¼ tsp
-Lehsan (Garlic) crushed 1 tbs
-Namak (Salt) ½ tsp or to taste
-Hari mirch (Green chilies) chopped 1 Cup
-Cheeni (Sugar) 1 pinch
-Lemon juice 2 tbs

Directions:
-In spice mixer,add mustard seeds,nigella seeds,fennel seeds,cumin seeds and grind or crush coarsely & set aside.
-In frying pan,add mustard oil,fenugreek seeds,turmeric powder and mix well.
-Add garlic and fry until light golden.
-Add ground spices and mix well until fragrant.
-Add salt,green chilies and mix well for 2 minutes.
-Add sugar and mix well.
-Add lemon juice,mix well and cook for 2-3 minutes & serve.

-Karhai mein oil aur pyaz dal dein aur translucent hunay tak sauté ker lein.
-Ek,ek ker ka anday shamil karein aur musalsal mix kertay rahein aur oil alag hunay tak paka lein.
-Tamatar dal ker ache tarhan mix karein aur tez ancch per 8-10 minutes kliya paka lein.
-Lal mirch crushed aur namak dal ker ache tarhan mix karein.
-Hari mich dal ker mix ker lein.
-Hara dhania dal ker ache tarhan mix ker lein.
-Dhak dein aur 4-5 minutes kliya dum per rakh dein.

Ajza:
-Rai dana (Mustard seeds) 1 tsp
-Kalonji (Nigella seeds) 1 tsp
-Saunf (Fennel seeds) 1 tsp
-Zeera (Cumin seeds) 1 tsp
-Sarson ka tel (Mustard oil) ½ Cup
-Meethi dana (Fenugreek seeds) ¼ tsp
-Haldee powder (Turmeric powder) ¼ tsp
-Lehsan (Garlic) crushed 1 tbs
-Namak (Salt) ½ tsp or to taste
-Hari mirch (Green chilies) chopped 1 Cup
-Cheeni (Sugar) 1 pinch
-Lemon juice 2 tbs

Directions:
-Spice mixer mein rai dana,kalonji,saunf aur zeera dal ker coarsely grind or chop ker lein & side per rakh dein.
-Frying pan mein sarson ka tel,meethi dana aur haldee powder dal ker ache tarhan mix ker lein.
-Lehsan dal ker light golden hunay tak fry ker lein.
-Ground spices dal dein aur khusbu anay tak ache tarhan mix ker lein.
-Namak aur hari mirchein dal ker 2 minutes kliya ache tarhan mix karein.
-Cheeni dal ker mix ker lein.
-Lemon juice dal ker ache tarhan mix karein aur 2-3 minutes kliya paka lein & serve karein.
