Sujan Fun Kitchen is in a festive mood for the Navratri! Cashew nuts in moderation is beneficial to health - rich in copper, zinc, magnesium and phosphorus. So, indulge in Kesar Kaju Katli occasionally.
"A popular ingredient finding its way into many Indian gravies, cashew - a plant originating from Brazil, is a nut high in minerals. Brought to India by traders, the cashew tree grows up to exceptional heights having a rather irregular trunk. Hanging from the branches are large juicy apples at the bottom of which are attached the cashew nut. Made available round the year, the nut has a great shelf life if stored properly. The nut and the fruit, both have multiple uses. The nut, often known as the poor man’s plantation although now it is sold for steep prices, is used to make delectable and rich curries and also roasted and eaten dry. They are an intrinsic part of our festive celebrations too. Just imagine how incomplete Diwali celebrations would be without 'kaju ki barfi'. "

Ingredients:

Cashewnuts - 1 cup

Sugar - 1 cup

Saffron strands to taste and 2tsp milk

Water - ½ cup

Method:

Mix saffron and milk in a small cup and keep aside

Grind cashewnuts little by little in a mixi/blender to a smooth powder - AVOID putting all the cashewnuts at one go, or else the nuts powder will become oily

In a thick, heavy based pan, add the ½ cup of water with 1 cup of sugar

Add the saffron mix

Keep cooking till you see large bubbles - 2 string consistency

Now, lower the flame and add the cashewnuts powder and keep cooking briskly till non-sticky

Transfer to a greased plate and cut after half an hour
