KERALA STYLE MUTTON FRY AND RASAM | Vahchef - VahRehVah

Kerala Style Mutton Fry is a delicious roasted mutton dish that pairs well with Appam, Roti, and rice.

Ingredients:
• Cumin powder - 1/2 teaspoon.
• Coriander powder - 1/2 teaspoon.
• Turmeric powder - 1/2 teaspoon.
• Fennel powder - 1/2 teaspoon.
• Black pepper powder - 1/2 teaspoon.
• Garam masala powder - 1/2 teaspoon.
• Red chili powder - 1/2 teaspoon.
• Coconut oil - 1/4 cup.
• Mustard seeds - 1/2 teaspoon.
• Bay leaf - 2 number.
• Whole garam masala - 25 grams.
• Onion - 1 number.
• Curry leaves - 1 sprig
• Mint - 1/4 bunch.
• Coriander leaves - 1/2 bunch.
• Salt - to taste.
• Garlic pods - 10 number.
• Green chili - 3 number.
• Ginger garlic paste - 1/2 teaspoon.
• Tomato - 1 number.
• Lamb - 250 grams.
• Water - as required.
• Coconut pieces - 1/2 teaspoon.
• Lemon juice - 1 teaspoon.

Method:
1. First, take a plate to add cumin powder, coriander powder, turmeric powder, fennel seeds powder, black pepper powder, garam masala powder, red chili powder and altogether well and keep aside.
2. Now heat a pan, add coconut oil, mustard seeds, bay leaf, whole garam masala, chopped onions, curry leaves, mint, coriander leaves, salt and saute it till onions are slightly brown.
3. Then add garlic cloves, green chilies, ginger garlic paste and fry till the raw flavor is gone.
4. Add half amount of mixed spice powder, chopped tomatoes and cook for 4-5 minutes.
5. Now add lamb pieces mix well, transfer into a pressure cooker by adding some water and cook till meat is tender.
6. Then strain the meat from the gravy and keep aside.
7. Heat coconut oil in a pan, add coconut, garlic and saute them for few minutes.
8. Now add mint, coriander leaves, leftover mixed spice powder, cooked meat and cook till moister is evaporated.
9. Finally, add lemon juice and serve hot with rice along with rasam.
