Kerala Style Egg Chilly Fry

( One serving)

Ingredients

- 4 Tbs oil
-3 Boiled eggs
-1 cup shallots ( sambar onion) finely chopped
- 2-3 slit green chillies
- 4/5 fresh curry leaves
- 1/4 tsp red chilli powder
- 1/4 tsp turmeric powder
- 1/2 tsp ginger garlic paste
- 1/4 tsp black pepper powder
- Salt to taste

Method

1. With a knife make some marks on the eggs and rub turmeric & chilli powder.

2. Put oil in a pan and start the burner. Once the oil is hot toss the eggs for a minute or till you get a golden tinge on them.

3. In the same oil add the chopped shallots (sambar onions) and the curry leaves and give a good mix.

4. Add the ginger garlic paste along with all other spices and fry till oil separates from the spice mix. Add salt.

5. Add little water to prevent the masala getting stuck at the bottom of the pan.

6. Add the eggs and mix well with the spice, add the green chillies and mix well so that the eggs are well coated with masala.

- Best Served with parota or steamed rice.
