Crispy cutlets made using fresh cauliflower, some masalas and are shallow-fried till perfection. It makes for an awesome appetizer for all!

KARARE GOBHI KE CUTLETS

Ingredients

2 cups grated cauliflower
1 tbsp crushed ginger-garlic-green chillies
Salt to taste
½ tsp red chilli powder
¼ tsp turmeric powder
1 tsp cumin powder
1 tbsp dried mango powder
Crushed black peppercorns to taste
1½ tbsps white sesame seeds
1 medium onion, chopped
¼ cup rice flour
¾ cup gram flour
2 tbsps chopped fresh coriander
Oil for shallow frying
Micro greens for garnish
Green chutney for serving
Tomato ketchup for serving

Method

1. Take cauliflower in a bowl. Add crushed ginger-garlic- green chllies, salt, red chilli powder, turmeric powder, cumin powder, dried mango powder, crushed peppercorns, white sesame seeds, onion, rice flour and gram flour and mix well. Set aside for 5-10 minutes.
2. Divide the mixture into equal portions and shape into tikkis.
3. Heat oil in a shallow nonstick pan and shallow fry the tikkis on medium heat for 2-3 minutes on each side or till crisp.
4. Drain on absorbent paper
5. Transfer on serving plate, garnish with micro greens and serve hot with green chutney and ketchup.
