Kaleji Handi
Serves 4-5
Recipe in English:

Ingredients:
-Kaleji (Mutton liver) cubes kg
-Sirka (Vinegar) 1 tbs
-Dahi (Yogurt) whisked 1/3 Cup
-Cooking oil Cup
-Lehsan (Garlic) crushed 1 & tbs
-Adrak (Ginger) crushed 1 tbs
-Zeera (Cumin seeds) tbs
-Tamatar (Tomato) chopped 2 medium
-Lal mirch powder (Red chilli powder) 1 tsp or to taste
-Lal mirch (Red chilli) crushed 1 tsp
-Haldi powder (Turmeric powder) tsp
-Sabut dhania (Coriander seeds) roasted & crushed 1 tbs
-Cream 2-3 tbs
-Namak (Salt) tsp or to taste
-Garam masala powder tsp
-Kasuri methi (Dried fenugreek leaves) 1 tbs
-Hara dhania (Fresh coriander) chopped 1-2 tbs
-Hari mirch (Green chilli) sliced
-Adrak (Ginger) julienne

Directions:
-In a bowl,add mutton liver,vinegar & mix well.
-Add yogurt,mix well & marinate for 20 minutes.
-In a wok,add cooking oil,garlic,ginger and mix well.
-Add cumin seeds,mix well and fry ginger garlic until golden.
-Now add marinated liver,mix well & cook on medium low flame for 6-8 minutes.
-Add tomatoes & mix well.
-Add red chilli powder,red chilli crushed,turmeric powder,coriander seeds,mix well,cover & cook on low flame for 4-5 minutes then cook on medium flame until oil separates.
-Lower the flame,add cream & mix well.
-Add salt,garam masala powder,dried fenugreek leaves & mix well.
-Add fresh coriander & mix well.
-Garnish with green chilli,ginger & serve.

Directions:
-Bowl mein kaleji aur sirka dal ker ache tarhan mix ker lein.
-Dahi dal ker ache tarhan mix karein aur 20 minutes kliya marinate ker lein.
-Karhai mein cooking oil,lehsan aur adrak dal ker ache tarhan mix karein.
-Zeera dal ker ache tarhan mix karein aur adrak lehsan ko golden hunay tak fry ker lein.
-Ab marinated kaleji dal ker ache tarhan mix karein aur darmiyani halki ancch per 6-8 minutes kliya paka lein.
-Tamatar dal ker ache tarhan mix karein.
-Lal mirch powder,lal mirch crushed,haldi powder aur dhania powder dal ker ache tarhan mix karein aur dhak ker halki ancch per 4-5 minutes kliya paka lein phir darmiyani ancch per oil alag ho janay tak paka lein.
-Halki ancch per cream shamil karein aur ache tarhan mix ker lein.
-Namak,garam masala powder aur kasuri meethi dal ker ache tarhan mix ker lein.
-Hara dhania dal ker mix ker lein.
-Add fresh coriander & mix well.
-Hari mirch aur adrak dal ker serve karein!
