Kakadicha Sandan - काकडीचं सांदण | Cucumber Cake | Recipe by Archana in Marathi | Easy Indian Sweet | Ruchkar Mejwani

Kakadicha Sandan (Cucumber Cake) is a traditional Maharashtrian Sweet dish made with Kakadi (cucumber), coconut and jaggery during auspicious occasions. Learn this easy to make Indian dessert from our chef Archana on Ruchkar Mejwani.

Ingredients:

1 Grated Cucumber
1 Cup Grated Coconut
1 Cup Jaggery
4-5 tbsp Semolina
1 tbsp Oil
1 tbsp Cashews
1/2 tsp Cardamom Powder
Pinch of Salt

साहित्य:

१ काकडी, किसून
१ कप ओला नारळ
१ कप गुळ
४-५ tbsp रवा
१ tbsp तेल
१ tbsp काजू
१/२ tsp वेलची पावडर
मीठ

Method:

- In a pan, heat some oil.
- Add grated coconut, jaggery, cucumber, salt, cashews & cardamom powder. Mix everything well till the jaggery melts completely.
- Once the jaggery melts, switch off the flame.
- Add semolina as required and mix well.
- Grease an aluminium tray with oil. Pour the mixture in the greased tray and allow it to steam for 10-15 minutes.
- Once the mixture is cooked, let the mixture cool down for 10 minutes.
- Kakadicha Sandan is ready!
