Kadai Mushroom || കടായി മഷ്റൂം || Mushrom MasalaIngredients ----------------------For masala ( Coarsly Ground)Dry chilly - 3-4Coriander seeds -1tspCumin seeds-1tspBlack pepper -1/2tspFennel seeds-1/4 tsp----------------------------Onion-1large(cut in cubes) -2 medium(make paste)Capsicum -1 small (cubes)Mushroom -250gm(cut into cubes)Tomato-2medium(puree)Cashew-15 numbers(paste)Green chilly)2Ginger garlic paste-1tbsCumin seeds - 1/2tspCoriander powder-1/2 TspTurmeric -1/4tspKashmiri chilly powder-1tbsGaram masala powder-1/2tspFresh cream- 3tbsSalt- To tasteCoriander leaves-(chopped )Veg oil - 4-5tbsMethod---------------•Dry roast the masala on medium flame, roast untill light brown and coarsly ground the masala •Heat a pan, add1tbs oil•Once heat up, add capsicum and onion and saute it for 2mins on high flame and keep it aside once done•In the same oil,* if oil is not left, add 1tsp oil and fry the mushroom also for 2min on high flame and take them off into a bowl•Add 3tbs of oil, splutter cumin and add onion paste and fry for few minutes in medium flame and add ginger garlic paste and fry until the raw smell goes off and the colour changes•Add, chilly powder, coriander powder, turmeric and salt •saute for a whileകടായി മഷ്റൂം || ഇതൊരു വെറൈറ്റി ആണ് കടായി മഷ്റൂം | Kadai Mushroom| North Indian Food Kerala Style•Add little water and fry the masala in medium flame till the raw smell goes and oil separates•Add tomato, cashew and green chilly paste and 1/2 of the grounded masala and fry well on medium to high flame•when oil comes to the surface add the sauted onion, capsicum mushroom, garam masala, fresh cream and 1cup of water and give good mix•Cover with a lid and cook for 6-7min on low flame•Add rest of the ground masala and chopped coriander leaves and turn off the flame. #Kerala #Cooking #Indian #Recipe
