Today we're making a Jiggly Japanese Cotton Soft (Soufflé) Cheesecake Recipe. The soft jiggly texture of this Japanese cheesecake is a dream to eat. This isn't the exact Uncle Tetsu cheesecake recipe; but I think Uncle Tetsu would be proud!A cheesecake like no other - very soft, light, and airy! You really do need to weigh the ingredients… so pull out those scales.
