Japanese Fried Tofu and Vegetable Stir Fry

Hi everyone!
Stir fry dishes are great when you need something quick and healthy! Or when you need to clean out your frig ;)

Today we have a mix of zucchini, broccoli, and fried tofu. Lots of nutritious vegetables to keep you full and your tummy happy.

Hope you enjoy!

Recipe (serves 2-3)

6.5oz fried tofu (atsuage)
1 zucchini, chopped into half moon
3 oz broccoli, chopped
extra virgin olive oil for frying

Miso Sauce:
1 1/2 tablespoons miso
2 teaspoons mirin
1/2 tablespoon extra virgin olive oil
1 teaspoon apple cider vinegar

1. Boil fried tofu for a few minutes to remove excess oil. Drain and wrap in a paper towel to drain moisture.
2. Prepare vegetables.
3. Cut tofu into bite size pieces.
4. Heat a frying pan on medium heat, add oil, and add in vegetables.
5. Cover and steam on low for a few minutes or until broccoli turns bright green and zucchini is soft.
6. Add tofu. Stir fry on medium heat until tofu is slightly browned on the outside.
7. Add miso sauce. Combine well.
8. Optional: Top with shichimi togarashi (Japanese ground spice powder).
9. ENJOY! Lovely with rice:)
