SINGLE SERVE JAMBALAYA:
In this episode of One and Done, Max Nelson whips up a single serving of comforting, full-of-flavor Jambalaya in the spirit of Mardi Gras. He adds the classic chicken thighs and smoked sausage and heats things up with cajun seasoning, of course!

"As Mardi Gras rolls around and I'm here in New York, missing the heart and soul of New Orleans, I've decided to whip up a little celebration in a pot my own single-serving Creole Jambalaya. It's tough to find that authentic taste outside of NOLA, but I'm bringing it home with a recipe that's got all the warmth and spirit of the Big Easy. I'm going for the Creole variety, with tomatoes mingling in the mix, because that's the flavor that takes me right back to those lively streets. And what I love about Jambalaya is its anything-goes attitude towards proteins so grab whatever you have on hand and make it your own.
