Jain Olive and Tomato Pasta | Sanjeev Kapoor Khazana

Farfalle pasta tossed in creamy tomato sauce with black olives.

JAIN OLIVE AND TOMATO PASTA

Ingredients

1 tablespoon chopped black olives
1 cup tomato puree
2 cups farfalle pasta, boiled
1 tablespoon olive oil
1 teaspoon dried oregano
1 teaspoon red chilli flakes
Salt to taste
1 tablespoon tomato ketchup
5-6 fresh basil leaves + for garnishing
1 medium red bell pepper, cut into small cubes
½ cup fresh cream
1 cup grated processed cheese

Method

1. Heat olive oil in a non-stick pan. Add tomato puree, oregano and chilli flakes and mix well. Add salt and mix.
2. Add tomato ketchup and torn basil leaves, mix and cook for 2-3 minutes.
3. Add red bell pepper and mix well. Add cream and cheese, mix well and cook for 2 minutes.
4. Add pasta and mix well.Add olives and switch off the heat. Mix well.
5. Serve hot garnished with a basil leaf.

Preparation Time: 5-10 minutes
Cooking Time: 20-25 minutes
