1/4 tsp Asafoetida
2 Bay Leaves
1-inch Cinnamon Stick
2 Green Cardamom

1 tsp Coriander Powder
2 tsp Red Chilli Powder
3 Tomatoes (pureed)
2 tbsp Whisked Curd
1 tbsp Dry Mango Powder
1& 1/2 tsp Salt

About Jackfruit Curry
In Indochina, the two varieties are the "hard" version (crunchier, drier, and less sweet, but fleshier), and the "soft" version (softer, moister, and much sweeter, with a darker gold-color flesh than the hard variety). Unripe jackfruit has a mild flavor and meat-like texture and is used in curry dishes with spices in many cuisines.
