Italian Style Baby Potatoes

Baby potatoes are truly very lovable -- small and cute to behold and soft and sweet to taste! Here is a very aesthetic way of preparing this delicious starter, with cream, butter, cheese and Italian seasonings. The final garnish of parsley imparts a tempting aroma to the preparation, and also adds specks of green that shows up well against the potatoes. Indeed, a rich and fine treat.

Preparation time: 15 minutes. Cooking time: 7 minutes. Serves: 4.

Ingredients
1½ cups boiled and peeled baby potatoes, cut into halves
1½ tbsp butter
Salt to taste
½ cup fresh cream
¼ cup grated processed cheese
½ tsp dried oregano
1 tsp dry red chilli flakes
Freshly ground black pepper powder to taste

For the garnish
1 tbsp finely chopped parsley

Method
1. Heat the butter in a broad non-stick pan and add the potatoes and sauté on a high flame for 3 to 4 minutes or till the potatoes turn brown in colour, while stirring continuously.
2. Add the salt and sauté on a medium flame for 1 minute.
3. Add the cream, cheese, chilli flakes, oregano and pepper, mix well and cook on a medium flame for 1 to 2 minutes, while stirring occasionally.
Serve immediately garnished with parsley.
