Instant Pot Carrot Cake

Ingredients:
* 1/4 cup and 2 tablespoons white sugar
* 1/4 cup and 2 tablespoons brown sugar
* 1/4 cup vegetable oil
* 1/4 cup sour cream
* 2 large eggs
* 1 and 1/4 cup all purpose flour
* 1 teaspoon baking powder
* 1/2 teaspoon baking soda
* 1/4 teaspoon salt
* 1 teaspoon ground cinnamon
* 1/8 teaspoon ground ginger
* 1/8 teaspoon ground nutmeg
* 1/8 teaspoon ground cloves
* 1.5 cups grated carrots

Ingredients for Cream Cheese Frosting:
- 4 oz cream cheese (~100g, half a block)
- 1/4 cup unsalted butter, room temperature
- 1 cup icing sugar, sifted
- 1/4 teaspoon vanilla extract (optional)

Directions:
1. Peel and grate carrot(s)
2. Combine eggs, sugar, oil and sour cream
3. In separate bowl, combine dry ingredients - flour, baking powder, baking soda, salt, cinnamon, ginger, nutmeg, cloves
4. Pour wet ingredients into dry ingredients and mix
5. Add in carrots and mix again
6. Pour into 6 pan. Add water and trivet then pan to instant pot.
7. Select cake function high pressure for 35 minutes.

Directions for cream cheese frosting:
1. Using mixer, blend together cream cheese and butter until smooth.
2. Add in sugar and vanilla extract and mix again until smooth.
