Instant Pot Carrot CakeIngredients:* 1/4 cup and 2 tablespoons white sugar * 1/4 cup and 2 tablespoons brown sugar* 1/4 cup vegetable oil* 1/4 cup sour cream* 2 large eggs* 1 and 1/4 cup all purpose flour* 1 teaspoon baking powder* 1/2 teaspoon baking soda* 1/4 teaspoon salt* 1 teaspoon ground cinnamon* 1/8 teaspoon ground ginger* 1/8 teaspoon ground nutmeg* 1/8 teaspoon ground cloves* 1.5 cups grated carrotsIngredients for Cream Cheese Frosting:- 4 oz cream cheese (~100g, half a block)- 1/4 cup unsalted butter, room temperature- 1 cup icing sugar, sifted - 1/4 teaspoon vanilla extract (optional)Directions:1. Peel and grate carrot(s)2. Combine eggs, sugar, oil and sour cream3. In separate bowl, combine dry ingredients - flour, baking powder, baking soda, salt, cinnamon, ginger, nutmeg, cloves4. Pour wet ingredients into dry ingredients and mix5. Add in carrots and mix again 6. Pour into 6 pan. Add water and trivet then pan to instant pot. 7. Select cake function high pressure for 35 minutes. Directions for cream cheese frosting:1. Using mixer, blend together cream cheese and butter until smooth. 2. Add in sugar and vanilla extract and mix again until smooth.
