After you make the first two cuts to form the first slice of pie, make a third cut to form the second slice. Then slide the first piece out; the extra cut allows for more movement within the pie, making it easier to slide out the first piece in a tidy, intact manner.

Also, be sure you’re using a good pie server. It should be sharp enough to cut cleanly and agile enough to neatly slide under a slice to lift it and put it on the plate in one perfect piece.
