Making fresh pasta can be surprisingly easy if you're willing to take the first step! If you were good at playing with playdough when you were a kid then I would imagine you would be pretty good at shaping pasta. Here is a simple recipe for a pasta dough and a guide on how to make tortellini with a ricotta and caramelized onion filling.

Ingredients you'll need:
Pasta Dough-
285g (about 2 cups) all purpose flour
3 whole large eggs
generous pinch of salt

Filling-
250g (1 cup) whole milk ricotta
3 tablespoon fresh chopped parsley
1 onion
1/2 tablespoon olive oil
salt to taste
