Japanese people used to make their own miso, but nowadays, they quit. Some people still make miso at home. It takes a half year to a year, so it is easy to buy miso from the supermarket now. However, it is fun to make your own miso, and you will have live bacteria culture miso which store miso is not (depends on the company). I learn from Yamaki Jyozo in Saitama prefecture in Japan, and their recipe is Kanto miso (East coast miso), which is darker color miso compare to the west coast. I made a video about miso on the other video, but it was not a good one, so I am planning to make it again for the future.
