How To Make Gomme Syrup / Gum Syrup For Cocktails
Welcome Friends! Welcome back to the kitchen, and a little series I'm calling cocktails 101. It's about all of those things in the background that you might need in order to have a great cocktail party.
Today I'm going to make gum syrup, although it's usually spelled in the French "gomme syrup" and it uses Gum Arabic, to add a silky thick something to otherwise ordinary simple syrup.
Ingredients:
60 mL (¼ cup / 4 Tbsp) fine Gum Arabic powder
60 mL (¼ cup) water
250 mL (1 cup) granulated sugar
125 mL (½ cup) water


Method:
Put the Gum Arabic powder in a small beaker or heatproof measuring cup.
Bring ¼ cup of water to a near-boil and pour over the Gum Arabic.
Whisk until it looks like it’s fully dissolved.
Set it aside for 3-4 hours.
After 3-4 hours; make the simple syrup.
In a small pot gently heat and stir together the sugar and ½ cup water to just below the boiling point.
Stir until the sugar is completely dissolved and the liquid turns clear.
Remove from the heat and stir in the gum syrup.
Place in a sealable bottle and keep in the fridge.
This will last almost forever in the fridge; the sugar content is high enough to inhibit any mold growth.
