Most ginger syrup is just water, sugar, and ginger; simmered and steeped. Easy to make and very enjoyable…But we always thought that they lacked a little something - there was no wow factor. So we amped it up a bit with some extra spices, and came up with something that will blow your socks off!Ingredients:1 cup (250 mL) brown sugar1 cup (250 mL) white sugar2 cups (500 mL) water5 oz (150g) sliced ginger2 tsp (10 mL) cardamom pods1 tsp (5 mL) whole allspice1 tsp (5 mL) peppercorns3 star anise podsMethod:In a pot, combine the water, sugars, and ginger. Toast the whole spices in a ‘dry’ pan until they just begin to become fragrant. Add the spices to the sugar and water mixture and bring it to a simmer. Simmer for about 15 minutes and then turn off the heat.Allow mixture to steep until cool; then strain into a sealable container and store it in the refrigeratorDry out the slices of ginger… and eat them like candy.2 Tbsp (30 mL) of syrup with 12 oz soda water and some ice makes a very refreshing glass of ginger ale.
