How to make ★Chocolate Eclair and Coffee Eclair★~エクレアの作り方~(EP45) | Kitchen Princess Bamboo

Today, I will show you how to make ”Chocolate Éclair” and ”Coffee Éclair”.

Last week I introduced you to Japanese ”Choux Cream” recipe.  Choux pastry is so versatile.  You can make various kinds of pastry, or even savory snack if you master the technique.

Both eclairs are quite popular in Japan. Choux cream is for daily treat, eclair is for the dessert for a special day!

<choux pastry>
100ml water
100ml milk
100g butter
120g cake flour
1 teaspoon salt
4 large eggs


<pastry cream>
5 egg yolks
125g granulated sugar
25g bread flour
25g corn starch
500ml whole milk
A pinch of salt
1 teaspoon of vanilla paste (or vanilla beans)
30g butter

30g semi-sweet chocolate +200g pastry cream=chocolate pastry cream

250g pastry cream +coffee solution=coffee pastry cream
