Ingredients:
Vegetable Oil
White Sugar
2 Cups Sweet Potatoes ( 2 Cups Apples)

Directions:
Fill a wok or frying pan with vegetable oil, make sure to add enough so oil can cover anything you put in there.

Heat oil on high heat until the oil is 50% - 60% heated. You can check this by sticking a wooden chopstick or spoon into the oil and see small bubbles gather around. If the bubbles gather vigorously then the oil is too hot.

Cut the sweet potatoes or apples into bite sized pieces and dry them completely before putting them into the oil.

Soon as the sweet potatoes/apples enter the oil turn the heat to low and fry for about 5 min or until they are cooked through. Test this by using your chopstick and see if it can easily poke into the potatoes or rather easily with the apples.( we want to leave a little crunch with the apples)

Take sweet potatoes/apples out of pan and set aside on a plate.

Heat the oil on high, let oil temperature rise and toss sweet potatoes/apples back in for 1 minute. Afterwards take them out and set aside on a plate.

Take another pan and heat it with medium heat.

Add 1/2 cup sugar into the pan and slowly stir in 1/4 cup water.

Stir the sugar non stop until the bubbles turn tiny, the color turns brown and pan starts to smoke just a little.

Still in the sweet potatoes/apples toss and plate on a plate covered in olive oil to prevent sticking.

Eat right away by dipping the Ba Si in ice cold water.
