How To Make Buttermilk Pancakes | Glen And Friends Cooking

Are you buying pancake mix? Why?? Julie shows you how easy it is to make pancakes from scratch, using the simple ingredients in everyone's cupboard. This recipe is simple and easy.

Ingredients:
2 1/4 cup cake and pastry flour
1 tsp salt
1 tsp baking soda
1 Tbsp brown sugar
3 eggs
4 Tbsp melted butter
2 cup buttermilk (try our buttermilk substitutions)
1tsp baking powder

Method:

Mix together dry ingredients - but reserve the baking powder.
Whisk together the eggs, butter, and buttermilk
Combine wet and dry ingredients, whisk until smooth.
Cover and refrigerate overnight - You can skip this step, but it really helps the flavour.
Just before cooking sprinkle the baking powder over the batter and combine
Cook in a medium temp non stick fry pan, with just a touch of oil in the bottom.
Makes 18-20 pancakes.
