Thank you very much for your support! ~ Rockin RobinLemon CurdIngredients:3 eggs, pastured if possible7 Tbsp. butter, pastured like Kerigold cup fresh organic lemon juice2/3 cup sugar, add more if you like it sweeterZest from 3 organic lemonsDirections:Place the eggs and sugar into a 2 qt. Saucepan and whisk until blended. Add the zest, butter and lemon juice and place this over medium low heat. Stir pretty constantly with a wooden spoon for about 8 minutes.Once the curd thickens and sticks to the back of the spoon and stays pretty much put when you swipe your finger across the curd, you know its done.
