Lemon Curd

Ingredients:
3 eggs, pastured if possible
7 Tbsp. butter, pastured like Kerigold
cup fresh organic lemon juice
2/3 cup sugar, add more if you like it sweeter
Zest from 3 organic lemons

Directions:
Place the eggs and sugar into a 2 qt. Saucepan and whisk until blended. Add the zest, butter and lemon juice and place this over medium low heat. Stir pretty constantly with a wooden spoon for about 8 minutes.

Once the curd thickens and sticks to the back of the spoon and stays pretty much put when you swipe your finger across the curd, you know its done. Like I said, it takes only 8 minutes or less!

If by chance your lemon curd gets some lumps from the egg, just pour it through a strainer and it will come out smooth as silk.

Serve lemon curd on toast, bagels, pound cake, lemon tiramisu https://youtu.be/gSAIjVaTxLY or any other dessert you need some lemon flavor.
