Canola oil for frying

1 medium-size potato, cut into 1-inch cubes
1 1/4 teaspoons sea salt, divided
1/4 teaspoon freshly ground black pepper
7 ounces ground pork
1 small shallot, finely minced
4 garlic cloves, finely minced
2 tablespoons fresh ginger, finely minced
1 tablespoon garam masala
1 1/2 teaspoons ground turmeric
1/4 teaspoon ground cumin
