HOW TO MAKE CACIK (Jah-juck) - Turkish Chilled Mezze With Yogurt, Cucumber And Dried Mint Flakes

In this episode, I'd like to share with you my version of CACIK (Jah-juck) recipe, a refreshing and cooling dish. It can be eaten on its own on a hot summer's day or can be served with almost anything. Can also be used as a dip sauce. It is very easy to prepare and tasty, so may become one of your favourite summer treats before you realize :) Hope you give it a try!

INGREDIENTS (3-4 servings)
2 small cucumbers
6 real tablespoonful thick yogurt
1/2 cup cold water
1 tbsp dried mint flakes
3-4 cloves garlic (optional)
Salt & white pepper
Olive oil

DIRECTIONS
You can prepare CACIK of all consistencies, except for two.
If the mixture seems too thick, or doesn't seem snow-white, then it is not the right consistency.
The good news is; you can fix it simply, by adding some more water or yogurt.
To prevent cucumber from being watery, there are two things you can do.
Peel cucumber and hold, cut finely spaced vertical stripes, top to center, then turn it 90 degrees and repeat the same.
Hold it parallel to a bowl, slice thinly and try to make lots of tiny cucumber cubes :)
Keep cuting and slicing until all is used.
Or rinse the cucumbers, cut off stems and any bad spots.
Grate into a large bowl.
Using your hand, squeeze the grated cucumber and squish out as much water as possible.
Then use for making CACIK.
Now add 6 real tablespoonful thick yogurt into the bowl, and mix.
Gradually add cold water and whisk gently, until you get the consistency you want.
I like it thick, so add about 1/2 cup water.
(I don't add any water, if using plain yogurt.)
Add 1 tbsp or to taste dried mint flakes, mix well.
Sprinkle 1/4 tsp or to taste salt, a tiny pinch of white pepper, drizzle with some olive oil, mix again.
Check for the seasoning and add more salt if needed.
Add 3-4 cloves peeled and minced garlic, if desired. I usually don't add.
You can serve CACIK immediately with some ice-cubes in it, or chill for a few hours before serving.
For serving, divide CACIK into small bowls.
Garnish with some dried mint flakes. (or a sprig of fresh mint or fresh dill)
Drizzle with some olive oil, then serve and enjoy.
