How to make Ayamashe and ofada Rice

Ayamase stew is also known as Ofada stew with its unique taste. This stew is prepared with a combination of Green pepper, yellow pepper, onions and its spiced using indigenous ingredients such as the locust bean and this gives it a distinctly delicious taste.

INGREDIENTS
4 Green bell peppers
Assorted Meat
1 Large Onion
Unripe Scotch Bonnet Peppers
2 Tbsps Locust Bean
2 Tbsps Crayfish
3/4 Cup Palm Oil
Dried Fish
4 Boiled Eggs
Beef Stock
Seasoning Cubes
Salt to taste
Ofada rice

STEPS
1. Rinse the Bell peppers, Onions, and Habanero and cut them into chunks - this will make the blending process easier.
2. Blend the Peppers and Onions a little at a time adding very little water while blending because excess water is not needed.
3. Rinse the assorted meat and put it in a pot
4. Add seasoning cubes, salt, onions, and a little water. then cook until the meat is tender
5. Put another clean pot on the fire and pour in palm oil
6. Bleach palm oil and let it cool off
7. Add boiled meat and stir
8. Add crayfish and boiled meat and stir
9. Add locust beans and stir. Leave for few minutes
10. Add blended pepper and stir properly
11. Add meat stock and chopped onions and stir
12. Leave stew to fry
13. Put water in a clean pot and let it boil
14. Rinse ofada ride and pour into a boiling pot
15. Cook until rice is soft
16. Serve hot and enjoy
