How To Cook Pork Tenderloin - What's On Sale - Glen And Friends Cooking

Ok - Not a recipe; but a method.

Lightly coat your pork tenderloin with cooking oil, then sprinkle all over with a spice blend or simple salt and pepper.
Allow to sit in the fridge for a few hours; or cook immediately, your choice.
Preheat oven to 425F.
Heat some oil in a heavy oven proof frying pan over high heat, then sear the tenderloin on 2 sides, about 3-5 minutes per side.
Insert an instant read thermometer into the tenderloin and transfer to the oven.
Roast until the internal temp reaches 145F.
Remove tenderloin from oven / pan and tent with foil.
Place pan on stovetop over medium high heat, melt in some butter then add in a minced shallot and a few sliced mushrooms.
Fry until the mushrooms loose most of their moisture, then add in a few slugs of brandy and allow to fry for a minute or two.
Flambe!
Stir in some heavy cream, remove from heat and enjoy.
