Homemade Leek & Bacon Pie - French Tourte

After going through my French culinary school books, I manage to find a great and easy pie recipe that really resemble a Canadian pie and would be perfect for that occasion.

The recipe of the day is a called a Tourte (pie) and its Filled with slow cooked Leeks, cream and bacon. It is actually a classic dish coming from the Picardie region in France, but I think this would be perfectly suited that for a Canadian or American Thanksgiving.

A delicious homemade shortcrust pie casing, filled with a blend of creamy slow cooked leeks and chunks of farmhouse bacon. This creamy filling is then lightly seasoned with some cayenne pepper and nutmeg which add some personality to the dish. You will need a good quality pie dish (Tourtiere) for best result.
