HERBED PANEER Ingredients1-2 fresh thyme sprigs1-2 fresh rosemary sprigs1-2 fresh oregano sprigs 1½ litres full fat milk150 ml fresh cream60 ml vinegarMethod1. Heat a non-stick pan. Add milk and bring to a boil.2. Remove the leaves of the herbs from the stem, roughly chop and add to the milk. Stir.3. Add cream, mix well and bring to a boil once again. Add vinegar, mix till the milk curdles. Add ice cubes and mix. 4. Place a muslin cloth over a large bowl. Pour the curdled milk in it, strain and tie a tight knot. 5. Keep a perforated plate on another bowl. Put the muslin cloth with the curdled milk on it, place a heavy weight on top and set aside for 2 hours or till the liquid strains completely. 6. Use as required.
