Healthy lunch & my guts are thanking me

Carrot Rice Balls
1/4 cup julienned carrot
1 tsp cooking oil
Pinch of salt and pepper
1 cup cooked warm rice
1 tbsp sesame seeds

Stir-fry carrot with oil, salt & pepper for a minute or until it's soften. Combine cooked carrot, rice, sesame seeds and season to taste. Shape as a triangle rice balls.

Quick Soymilk Stew
1 cup soymilk or unsweetened your choice of milk
2 tsp Yondu (you can substitute with vegetable or chicken bouillon or hondashi)
Handful mushrooms
Handful broccoli
Handful green onion
1 tbsp white miso (I used 1 tsp very-salty-doenjang, korean soybean paste)
Black pepper

Combine milk, yondu, mushrooms & broccoli in a small pot and bring to a soft boil over medium heat. Add green onion and miso, serve with black pepper.
