We are making "biberli ekmek"; a yeast bread baked with a spicy spread. It has a red pepper paste (or try with tomato paste), ricotta cheese, onion, spices, and olive oil. Perfect for breakfast, snacks, or a picnic.

Biber means pepper, and ekmek means bread. It is famous in Hatay city, in the southeastern part of Turkey. And this is the result you get when you search it on Google. Some people make it with a fluffy thick base; some with a thin crust like lahmacun.

Probably, the reason behind this delicious bread type is that they have one of the most delectable pepper pastes in the region and it makes everything delicious. I will show you two versions for the base, and both came out delicious.

Ingredients For Biberli Ekmek:
For the dough:
1 cup lukewarm water
1 cup milk (use 1 cup more water for vegan)
1/2 cup vegetable oil
1 package double-acting dry yeast or 20gr fresh yeast
2 tsp sugar
2 tsp salt
about 5+1/2 to 6 cups of all-purpose flour
For the top spread:
about 1/4 cup or more vegetable or olive oil
1 big onion
4 heaped tbsp red pepper paste or a mix of red pepper and tomato paste (Here you ca get it from Amazon https://amzn.to/3AjeIer)
2 tsp each thyme, cumin,
1 tsp coriander
4-5 heaped tsp sesame seeds
1-2 tsp nigella seeds
1-2 tsp paprika
about 1/2 cup crumbled ricotto-like cheese (we use lor peynir)
extra olive oil if needed to have a spreadable consistency
