Halloween Wagashi | The Chinese Cuisine

Wagashi are Japanese confections. In this video, we make them into Halloween themed shapes in honor of the spooky holiday. We use red bean paste as fillings (made from the adzuki beans).

INGREDIENTS:
- 1.5 cups beans/peas (we used great northern beans, green split peas, and adzuki beans)
- 1 cup water + 2 tbsp
- 1/4 cup rock sugar
- 1 tbsp. glutinous rice flour (NOT corn starch! TYPO)
- food coloring (optional)
- 1 tbsp. sugar

DIRECTIONS:
1. soak your beans in water for several hours, and if necessary, peel off the skins
2. cook in pressure cooker for 30 minutes (alternatively, cook in a pot) with a ratio of 1.5 cup beans to 1 cup water
3. add in rock sugar, adjust to taste
4. when your beans have been cooked, they should be quite mushy. mash them and then blend in blender until smooth
5. stir 1 tbsp. of glutinous rice powder in with 2 tbsp. of water and 1 tbsp. of sugar. bring over low heat
6. when the mixture becomes sticky add in blended beans
7. fold and incorporate the mixture in with the beans until the mixture is dry and no longer sticks and shapes easily like play-doh (refer to video)
8. store in airtight container for up to a day at room temp; longer in fridge
9. follow video to shape into designs.
10. serve and enjoy!
