Gujiyas are sweet dumplings made of maida or flour and filled with a delightful khoya and dry fruits mixture and are popularly made in Uttar Pradesh, Rajasthan and Madhya Pradesh. GUJIYAIngredients1 cup whole wheat flour1 tablespoon ghee + for greasing1 cup khoya10-12 dates, deseeded and chopped¼ teaspoon green cardamom powder¼ cup fresh scraped coconut4-6 almonds, blanched and slivered1 tablespoon chopped walnuts1 tablespoon raisinsMethod1. Take wheat flour in a bowl. Add ghee and mix. Add some water and knead into a semi-soft dough. Set aside for 10-15 minutes.2. Heat khoya in a non-stick pan and mix till it melts. Add dates, mix and cook till it slightly softens. 3. Add cardamom powder and mix. Add coconut, mix and cook for 1 minute. Remove from heat, add almonds, walnuts and raisins and mix well. Transfer on a plate and cool.4. Preheat oven to 180º C.5. Divide the dough into equal medium portions.6. Grease the worktop with some ghee and roll each portion to make a semi-thick sheet. Cut each sheet into roundels using a large cookie cutter. 7. Put some khoya mixture in the center of each roundel, apply some water on the edges of the roundels, fold into a moon shape, press the edges to seal and twist to create a pattern. These are gujiyas.8. Place the gujiyas on a baking tray and brush some ghee on top.9. Put the tray into the preheated oven and bake for 12-15 minutes. Remove from oven and slightly cool.10. Serve.
