Guizhou Chili Paste - Spicy Ciba Lajiao for Stir-frying (贵州糍粑辣椒) | Chinese Cooking Demystified

Guizhou cuisine is, in my opinion, the spiciest food in China. This chili paste here is really quite hot, and can serve as the base for stir-frying or braises. It uses Zunyi chilis, one of the hottest in China, to really amp up the heat.
