Greg and Yon make Radish Kimchi (ChongGak Kimchi)

In this video we make Radish Kimchi (ChongGak Kimchi), which features whole young Daikon radishes. This side dish (banchan) will bring more crunch and flavor to your meals, goes great with Korean Ramen, or is enjoyable with rice for a light, quick meal. Enjoy!!!

Ingredients:

20 Bunches (2-4 each) Small Daikon Radishes
2 DaePa (Large Korean Green Onion)
2 1/2 Heads of Garlic
1 Onion
3 Tbsp Ginger
1/4 Cup Salted Shrimp
1/2 Cup Fish Sauce
1/2 Cup Anchovy Sauce
1/2 Cup Rice Flour
20 small Jalapenos
1 Cup Ground Korean Red Pepper
2 Cups Water
Coarse Salt
