Ingredients

To Make Spinach Puree
100 g spinach leaves
Water as required

To Boil Pasta
200 g penne pasta
1 tsp olive oil
2 tsp salt

To Sauté Vegetables
1 tbsp virgin olive oil
4 - 5 crushed garlic cloves
1 cup brussel sprouts (halved)
1/2 cup french beans
1 cup broccoli florets
1/2 tsp salt
1/2 tsp crushed black pepper
1/2 tsp garlic powder

To Make Pasta Sauce
1 1/2 tsp virgin olive oil
chopped garlic (prepared with veggies)
1 tbsp whole wheat flour
1 cup skim milk
spinach puree
1 tbsp light mozzarella cheese (optional)
1/2 tsp salt
1/2 tsp pepper

Before serving pasta drizzle some olive oil
