This is my recipe for Greek braised rooster kapama. It is the traditional Greek New Year's Eve meal that is enjoyed by Greeks throughout Greece. Although rooster is traditionally served, if you can't find rooster just use chicken and prepare it in the same way. Serve this on a bed of #5 spaghetti or a bucatini and you will be transported to Greece on New Year's Eve!!!
