Gosht ki Kadhi
Serves 6-8
Recipe in English:

Ingredients:
-Zeera (Cumin seeds) 1 tbs
-Pathar ka phool (Stone flower) 2 pieces
-Besan (Gram flour) 3 tbs
-Water Cup
-Sejna ki phalli (Drumsticks) 150g
-Cooking oil Cup
-Pyaz (Onion) chopped 1 medium
-Mutton mix boti kg
-Adrak lehsan paste (Ginger garlic paste) 2 tbs
-Lal mirch powder (Red chilli powder) 1 tsp or to taste
-Haldi powder (Turmeric powder) tsp
-Dhania powder (Coriander powder) 1 tsp
-Namak (Salt) 2 tsp or to taste
-Water 2 Cups or as required
-Tamatar (Tomatoes) chopped 4 large
-Curry patta (Curry leaves) 12-15
-Water 1 & Cup or as required
-Imli ka pani (Tamarind water) Cup (2 tbs of tamarind soaked in 3/4 cup of water)
-Garam masala powder tsp
-Elaichi powder (Cardamom powder) tsp
Prepare Tarka:
-Cooking oil 4 tbs
-Sabut lal mirch (Button red chillies) 5-6
-Zeera (Cumin seeds) tsp
-Lehsan (Garlic) chopped 1 tsp
-Curry patta (Curry leaves) 10-12
-Kashmiri lal mirch (Kashmiri red chilli) powder tsp

Directions:
-On a frying pan,add cumin seeds,stone flower & dry roast on low flame for 2-3 minutes.
-Let it cool.
-In a spice mixer,add roasted spices,grind well & set aside.
-In a bowl,add gram flour,ground spices,water,whisk well & set aside.
-Scrap and cut the ends of drumsticks then cut into 2-inch pieces & set aside.
-In a pot,add cooking oil,onion & fry until golden brown.
-Add mutton and mix well until it changes color.
-Add ginger garlic paste,red chilli powder,turmeric powder,coriander powder,salt,mix well & cook for 4-5 minutes.
-Add water,mix well & bring it to boil,cover & cook on low flame until meat is tender (45-50 minutes).
-Add tomatoes,curry leaves and mix well,cover & cook on low flame for 8-10 minutes then cook on high flame for 2 minutes.
-Add drumsticks,mix well & cook on medium flame until oil separates (4-5 minutes).
-Add water & mix well.
-Add tamarind water,mix well & bring it to boil.
-Add gram flour & spices mixture,mix well & cook until it thickens (6-8 minutes).
-Add garam masala powder,cardamom powder,mix well and cook for 1-2 minute & set aside.
Prepare Tarka:
-In a frying pan,add cooking oil,button red chillies,cumin seeds,garlic & mix well.
-Add curry leaves & mix well.
-Add Kashmiri red chilli powder & mix well.
-Dish out kadhi in a serving bowl,pour prepared tarka & serve with boiled rice!

Directions:
-Frying pan mein zeera aur pathar ka phool dal dein aur halki ancch per 2-3 minutes kliya dry roast ker lein.
-Thanda ker lein.
-Spice mixer mein roasted spices dal ker ache tarhan grind ker lein & side per rakh dein.
-Bowl mein besan,ground spices aur pani dal ker ache tarhan whisk ker lein & side per rakh dein.
-Sejna ki phalli ko scape ker ka sides ko cut ker lein phir 2-inch pieces mein cut ker lein & side per rakh dein.
-Pot mein cooking oil aur pyaz dal dein aur golden brown ho janay tak fry ker lein.
-Mutton dal dein aur rang tabdeel hunay tak ache tarhan mix ker lein.
-Adrak lehsan paste,lal mirch powder,haldi powder,dhania powder aur namak dal ker ache tarhan mix karein aur 4-5 minutes kliya paka lein.
-Pani dal ker ache tarhan mix karein aur ubal anay ka bad dhak dein aur halki ancch per gosht gul janay tak paka lein (45-50 minutes).
-Tamatar aur curry patta dal ker ache tarhan mix karein aur dhak ker halki ancch per 8-10 minutes klya paka lein phir tez ancch per 22 minutes kliya paka lein.
-Sejna ki phalli dal ker ache tarhan mix karein aur darmiyani ancch per oil alag ho janay tak paka lein (4-5 minutes).
-Pani dal ker ache tarhan mix ker lein.
-Imli ka pani dal ker ache tarhan mix karein aur ubal anay dein.
-Besan & spices mixture dal ker ache tarhan mix karein aur garha ho janay tak paka lein (6-8 minutes).
-Garam masala powder aur elaichi powder dal ker ache tarhan mix karein aur 1-2 minutes kliya paka lein & side per rakh dein.
Prepare Tarka:
-Frying pan mein cooking oil,sabut lal mirch,zeera aur lehsan dal ker ache tarhan mix ker lein.
-Curry patta dal ker eache tarhan mix karein.
-Kashmiri lal mirch powder dal ker ache tarhan mix ker lein.
-Kadhi ko serving bowl mein nikal lein aur tayyar tadka dal ker boiled chawal ka saath serve karein!
