This unique flatbread prepared with sugarcane is a must-try for everyone.

GANNE KI ROTI

Ingredients

¾ cup sugarcane juice (ganne ka ras)
1½ cups whole wheat flour (gehun ka atta) + for dusting
2 tbsps ghee + drizzling
A pinch of salt
½ tsp green cardamom powder

Method

1. Take whole wheat flour in a large bowl. Add ghee, salt and green cardamom powder and mix till the mixture resembles bread crumb consistency.
2. Add the sugarcane juice little by little and continue to knead till it forms a stiff dough. Cover with a damp muslin cloth and set aside for 10 minutes.
3. Dust the worktop with whole wheat flour. Take a small portion of the dough and shape it into ball and slightly flatten it. Roll it into a small disc.
4. Heat a non-stick tawa, place the disc on it. Cook for 2-3 minutes on medium heat. Flip, drizzle ghee and cook on the other side for 1-2 minutes. Flip again and apply some ghee on the other side as well.
5. Serve.
