Modak stuffed with coconut jaggery mixture and deep fried.FRIED MODAKIngredients2 tbsps ghee1 ½ cups scraped coconut¾ cup chopped jaggery1 tbsp poppy seeds¼ tsp green cardamom powderA pinch of salt½ cup whole wheat flour½ cup refined flourOil to deep fryMethod1. Heat 1 tbsp ghee in a non-stick pan. Add scraped coconut, jaggery and cook till jaggery melts and the mixture is thick. Add poppy seeds,green cardamom powder, pinch of salt. Mix well. Transfer the mixture into a bowl and set aside to cool.2. To make the dough mix whole wheat flour, refined flour, a pinch of salt and 1 tbsp ghee. Mix well. Add sufficient water and knead to stiff dough. Set aside for 10-15 minutes.3. Divide the dough into equal portions. Flatten each portion with a rolling pin into thin roundels. Gently place a portion of the cooked mixture on centre of roundels and gather the edges and pinch to form shape like modak.4. Heat sufficient oil in a kadai, add modaks and deep fry on medium heat till golden brown in colour. Drain on an absorbent paper.5.
