FRIED CHICKEN

Ingredients

4 chicken breasts cut into 2 pieces
1 teaspoon smoked paprika
1 teaspoon onion powder
1½ teaspoons garlic powder
1 tablespoon lemon juice
Salt to taste
Crushed black peppercorns to taste
3 tablespoons refined flour
1 cup buttermilk
1 cup crushed cornflakes
Olive oil for brushing
2-3 iceberg lettuce leaves

Method

1. Preheat an air fryer at 180º C.
2. Take chicken pieces in a bowl. Add paprika, onion powder, garlic powder, lemon juice, salt and crushed peppercorns and mix well. Set aside to marinate for 30 minutes.
3. Take flour in another bowl and coat each marinated chicken piece with it.
4. Take buttermilk and cornflakes in different bowls.
5. Dip each chicken piece in buttermilk and coat with cornflakes.
6. Place the prepared chicken pieces into the preheated air fryer, brush some olive oil and air fry for 15-18 minutes.
7. Roughly shred the iceberg lettuce leaves and spread them on a serving platter.
8. Place the fried chicken on top of the lettuce and serve immediately with your choice of sauce.
