FANSI DHOKLI By Chef harpal singh


Ingredients

Whole wheat flour - ½ cup
Bajra flour - 2 tbsp
Nachni (ragi ) flour - 2 tbsp
Jowar flour - 2 tbsp
Red chilli powder - 1/2 tsp
Turmeric powder - 1/4 tsp
Ajwain (carom seeds) - ½ tsp
White sesame seeds - 1 tsp +for garnish
Salt - to taste
Hing - ¼ tsp
Oil - 1tsp
Other Ingredients
Chopped French beans blanched - 2 cups
Oil - 2 tbsp
Cumin seed - ½ tsp
Hing - ¼ tsp
Red chilli powder - 1 tsp
Turmeric powder - ½ tsp
Coriander powder - 1 tbsp
Ginger garlic paste - 1 tbsp
Onion Chopped - 2 nos
Tomatoes chopped - 2 nos
Sugar - a pinch
Salt - to taste
Lemon - ½ no
Coriander chopped - 2tbsp + for garnish
Fresh coconut grated - 2tbsp + for garnish

Method:

For the dhoklis
• In bowl mix together nachni flour, whole wheat flour, bajra flour, jowar flour, turmeric powder, red chilli powder, hing, salt, sesame seeds, ajwain, oil, water and mix well and make dough.
• Divide the dough into small dhoklis and press it with your thumb in the center.
• Boil water in a pan and grease the tray and steam the dhokli until cook for 10-12 mints.
• Now heat oil in a non-stick kadai, add the cumin seeds and hing and sauté for a few seconds.
• Then add chopped onion and sauté until golden brown. Add in the ginger garlic paste and sauté well.
• Add tomatoes and sauté. Add salt, red chilli powder, turmeric powder and coriander powder, sauté well and cook it for some time. Now remove the dhokli and keep aside.
• Then add in the blanched french beans and dhokli and mix well.
• Add lemon juice and mix. Add coriander and grated coconut and mix well.
• Lastly add sugar and mix well.
• Serve hot garnished with chopped coriander ,fresh grated coconut and white sesame seeds
