FANSI DHOKLI By Chef harpal singhIngredientsWhole wheat flour - ½ cupBajra flour - 2 tbspNachni (ragi ) flour - 2 tbspJowar flour - 2 tbspRed chilli powder - 1/2 tsp Turmeric powder - 1/4 tsp Ajwain (carom seeds) - ½ tspWhite sesame seeds - 1 tsp +for garnish Salt - to tasteHing - ¼ tspOil - 1tspOther IngredientsChopped French beans blanched - 2 cups Oil - 2 tbspCumin seed - ½ tspHing - ¼ tspRed chilli powder - 1 tsp Turmeric powder - ½ tspCoriander powder - 1 tbspGinger garlic paste - 1 tbspOnion Chopped - 2 nosTomatoes chopped - 2 nosSugar - a pinch Salt - to tasteLemon - ½ noCoriander chopped - 2tbsp + for garnish Fresh coconut grated - 2tbsp + for garnishMethod: For the dhoklis• In bowl mix together nachni flour, whole wheat flour, bajra flour, jowar flour, turmeric powder, red chilli powder, hing, salt, sesame seeds, ajwain, oil, water and mix well and make dough.• Divide the dough into small dhoklis and press it with your thumb in the center.• Boil water in a pan and grease the tray and steam the dhokli until cook for 10-12 mints. • Now heat oil in a non-stick kadai, add the cumin seeds and hing and sauté for a few seconds.• Then add chopped onion and sauté until golden brown. Add in the ginger garlic paste and sauté well.• Add tomatoes and sauté. Add salt, red chilli powder, turmeric powder and coriander powder, sauté well and cook it for some time. Now remove the dhokli and keep aside.• Then add in the blanched french beans and dhokli and mix well.• Add lemon juice and mix.
