2.6kg 急凍鴨 2.6kg frozen duck

調味鴨醬: Duck marinade:

磨豉醬20克 Ground bean sauce 20g
海鮮醬20克 Hoi Siin Sauce 20g
南乳30克 Red bean curd 30g
糖40克 Sugar 40g
五香粉五克 Chinese five spice 5g
砂姜粉兩克 Spice ginger powder 2g
洒10克 - 可選擇玫瑰露 10g fragrant wine e.g. rose wine
20克海鮮醬 20g Hoi Sin Sauce
10克鹽 20g salt

鴨裏面嘅香料: Aromatics:

兩個拍鬆紅蔥頭 2 crushed shallots
四片厚切薑(拍鬆) 4 thick ginger slices (gently crushed)
兩粒八角 2 Star anise

鴨皮水: Duck glaze:

150毫升清水 150ml water
白醋60克 White vinegar 60g
浙醋30克 Red vinegar 30g
洒20克(例如玫瑰露)20g fragrant wine e.g. rose wine
梳打食粉兩克 Baking soda 2g
麥芽糖15克 Maltose 15g


脆皮漿材料: Crispy paste:

中筋麵粉10克 10g plain flour
粟粉五克 5g corn flour
梳打食粉1克 1g baking soda
40克蛋白 40g egg white
30克清水 30g water
