Eggnog can be used in all sorts of holiday baking ideas.Ingredients for the cake:250 mL (1 cup) butter310 mL (1¼ cup) granulated sugar4 large eggs10 mL (2 tsp) pure vanilla extract310 mL (1¼ cup) eggnog45 mL (3 Tbsp) rum500 mL (2 cups) all-purpose flour10 mL (2 tsp) baking powderFor the glaze:250 mL (1 cup) icing sugar30 mL (2 Tbsp) butter, melted60 mL (¼ cup) eggnog, approxMethod:Preheat oven to 180ºC (350ºF); grease and flour a bundt pan.Cream together the butter and sugar.Cream in the eggs. Combine flour and baking powder. Mix together the egg nog, rum, and vanilla.With the mixer on low speed, alternate adding the the eggnog mixture and the flour mixture. 3-4 additions, until just combined.
