Kou shui ji literally translates as saliva chicken. Silky poached whole chicken drenched with pungent Szechuan pepper chilli oil and is balanced out with vinegar. With such a name to live up to, one sure cant help but salivate at the sight of this dish.

Ingredients here
1 chicken
4 slices of ginger
5 cloves garlic
2 sprigs spring onions
2 tbsp Hua Tiao wine
tbsp salt

Sauce:
6 tbsp chilli oil
2 tbsp oil
3 cloves of garlic
5 slices of ginger
2 tsp Szechuan peppercorns
1 tsp chilli powder
1 tsp 5 spice powder
2 tbsp black vinegar
2 tbsp light soy sauce
2 tbsp sesame oil
2 tbsp Hua Tiao wine
tsp sugar
2 tbsp peanut (toasted and chopped)
2 tbsp sesame seeds (toasted)
Sliced spring onions and coriander for garnish
