Chicken Butter masala or simply murgh makhani is a very popular chicken recipes originating from the Northern India. Although it is curry based, its taste is very mild and creamy making it popular among the westerners as well. Traditionally butter chicken curry is cooked in a clay oven or tandoor. For butter chicken, the chicken is marinated in a mix of spices including cumin powder , turmeric powder, garlic & ginger, along with yogurt. A tomato sauce with butter and cream is then added to it. Yogurt - 3 tbsp3. Cumin Powder - 1tsp4. Turmeric Powder - 1 tsp5. Salt - 1/2 tbps or as per taste6. Kashmiri Red Chili Powder - 1/2 tbsp7. Coriander Powder - 1 tsp8. Garam Masala Powder - 1 tsp9. Ginger Garlic Paste - 1 tbsp10. Mustard Oil - 1 tbspMethod: 1. Mix all the ingredients with the chicken 2. Mix mustard oil and mix well3. Marinate for about an hourGravy Ingredients:1. Onion - 1 Small2. Cashews - 15-183. Tomatoes - 4-54. Kasuri Methi (Crushed) - 1/2 tbsp5. Peeled Garlic - 56. Ginger - 5 pcs7. Salt - 1 tsp or as per taste8. Kashmiri Red Chili Powder - 1 tbsp9. Cumin Powder - 1/2 tbsp10. Coriander Powder - 1 tbsp11. Green Cardamom - 512. Cinnamon - 1 Stick13. Cooking Oil 1-2 tbsp14. Butter - 4 tbsp15. Water - 1 Cup16. Tomato Ketchup - 3 tbsp17 Fresh Cream - 2 tbspMethod:1. Grease a pan with some oil 2. Fry the marinated chicken until its tender and keep aside3. Heat Oil (1 tbsp) and butter (1 tbsp) in a separate pan 4. Fry onion and tomatoes5. Add all spices and mix well6. Add Water and cook until tomatoes are mushy7. Let the mixture cool down. 8. Make a paste of the mixture in a mixer9. Strain the paste and keep aside10. In the same pan , add remaining oil (1 tbsp) and butter (3 tbsp) 11. Now add the gravy paste and bring it to a boil12. Add fried chicken and cook until chicken is tender (On Medium heat)13. Add Tomato Ketchup and stir well14. Now add Kasuri Methi 15.
