Dried Beancurd and Pork Rib (排骨炖腐竹) | The Chinese Cuisine

This dish consists of tender, juicy pork rib and flavorful pieces of beancurd.


INGREDIENTS:
- 2 sticks dried bean curd (softened in water)
- 1 lb. pork ribs
- 10 ml cooking wine
- 15 ml soy sauce
- 10 ml dark soy sauce
- 5 ml rice vinegar
- dried chili
- sichuan pepper
- rock sugar
- ginger
- star anise

DIRECTIONS:
1. boil pork ribs briefly
2. put pork ribs into pressure cooker
3. add in star anise, ginger, rock sugar, cooking wine, light soy sauce, dark soy sauce, and chinkiang vinegar
4. pressure cook for 30-40 minutes
5. add oil to pan on medium heat
6. add sichuan pepper into oil and shallow fry briefly then remove from pan
7. add dried chilis into oil and stir-fry briefly
8. add in softened bean curd and cooked pork ribs
9. cook until all the liquid evaporates
10. serve and enjoy!
