Doodh ka Halwa (Mawa)
Recipe in English:

Ingredients:
-Doodh (Milk) fresh 2 litres
-Pani (Water) 1 tbs
-Lemon juice 1 tsp
-Cheeni (Sugar) ½ Cup or to taste
-Asli ghee (Pure clarified butter) 2 tbs
-Elaichi powder (Cardamom powder) ½ tsp
-Pista (Pistachios)

Directions:
-In pot,add milk,bring it to boil and keep stirring in between.
-Cook on medium low flame until milk is reduce to half and stir continuously (approx. 30 minutes).
-In water,add lemon juice and mix well.
-Gradually add lemon water in milk,keep stirring and cook on medium flame till it gets thick and looks like curdle (approx. 25-30 minutes).
-Gradually add sugar,mix well continuously and cook until sugar water dries up.
-Add pure clarified butter,cardamom powder and mix well,cook on low flame for 5-6 minutes or until the mixture begins to leave the sides of the pot and mix well continuously.
-Grease baking dish/loaf pan with ghee,add mixture to a greased mould and press it.
-Cover with aluminum foil and let it set for at least 4 hours .
-Cut into desired shapes,garnish with pistachios & serve.

Ajza:
-Doodh (Milk) fresh 2 litres
-Pani (Water) 1 tbs
-Lemon juice 1 tsp
-Cheeni (Sugar) ½ Cup or to taste
-Asli ghee (Pure clarified butter) 2 tbs
-Elaichi powder (Cardamom powder) ½ tsp
-Pista (Pistachios)

Directions:
-Pot mein doodh dal ker ubal lein aur bech bech mein chamcha chalatay rahein.
-Halki darmiyani ancch per doodh ko adha reh janay tak paka lein aur musalsal chamcha chalatay rahein (approx. 30 minutes).
-Pani mein lemon juice dal ker ache tarhan mix ker lein.
-Thora thora ker ka lemon water ko doodh mein daltay jayein aur musalsal chamcha chalatay rahien aur darmiyani ancch per garha hunay aur curdle bun janay tak paka lein (approx. 25-30 minutes).
-Thori thori ker ka cheeni shamil karein aur musalsal chamcha chalatay rahein aur cheeni ka pani sukh janay tak paka lein.
-Asli ghee aur elaichi powder dal ker ache tarhan mix karein aur halki ancch per 5-6 minutes ya pot ki sides chornay tak paka lein aur musalsal chamcha chalatay rahein.
-Baking dish/loaf pan ko ghee sa grease karein aur mixture ko greased mould mein dal ker press ker lein.
-Aluminum foil sa dhak dein aur set hunay kliya kum az kum 4 hours kliya chor dein.
-Desired shapes mein cut karein aur pista sa garnish ker ka serve karein.
