Dhabe Ki Dal | Simple Vegetarian Khana With Chef Saurabh | Sanjeev Kapoor Khazana

Full of flavors this dal. This Punjabi Dal Fry is a common dish made throughout the homes and you too can make it dhaba style.

DHABAY KI DAL

Ingredients

½ cup split black gram with skin (chilkewali urad dal), soaked for 6-8 hours and drained
½ cup split Bengal gram (chana dal), soaked for 6-8 hours and drained
¼ cup red kidney beans (rajma), soaked for 6-8 hours and drained
1½ tablespoons butter
2 teaspoons oil
1 tablespoon chopped garlic
1 medium onion, finely chopped
1 medium tomato, finely chopped
1 teaspoon cumin powder
1 teaspoon red chilli powder
1-2 green chillies, finely chopped
Salt to taste
1 tablespoon chopped fresh coriander leaves
1 teaspoon roasted and crushed dried fenugreek leaves (kasuri methi)

Method

1. Pressure cook together split black gram, split Bengal gram and red kidney beans alongwith some salt in 4-5 cups water till 4-5 whistles are released. Open the lid when the pressure is completely released.
2. Heat butter and oil in a non-stick pan. Add garlic and sauté till golden brown. Add onion and sauté till golden brown.
3. Add tomato and sauté till the oil separates. Add cumin powder, chilli powder and green chillies, mix and cook for 1 minute.
4. Add cooked black gram mixture and mix. Add salt and ½ cup water, mix and cook for 10 minutes.
5. Pour the dal in a serving bowl. Sprinkle some dried fenugreek powder on top and serve hot.
